Open-cell foam is lighter (R-3.7/inch) and more affordable, ideal for interior walls. Closed-cell foam is denser (R-6.5/inch), acts as a vapor barrier, and adds structural strength.
For walls, 3-4 inches of closed-cell or 5-6 inches of open-cell is typical. For attics and roofs, 5-6 inches of closed-cell or 8-10 inches of open-cell provides optimal performance.
